In Bosnia, a country where minced meat in the
form of
burek or
ćevapčići is elevated to the status of a national
symbol, it can be extremely hard to be a vegetarian. Sarajevo's
Karuzo Restaurant is so far the only veggie joint in town and
probably in the whole country.
The interior of the restaurant resembles the inside of a boat,
decorated with helm, old maps, paddles, compasses and fish nets.
The atmosphere is so cozy and realistic, that it looks as if the
Captain will come in any moment from the 'deck', in fact a small
garden outside the restaurant.
All the decorations originate from
Cavtat, a small coastal town further south from
Dubrovnik.
A keen health food fanatic, the owner, Saša
Obućina invested his own passion and lifestyle into
the restaurant, where he also does most of the cooking. He says
he prefers a combination of vegetarian, macrobiotic and
Mediterranean cuisine, while at Karuzo Restaurant he also
offers fish, most notably sushi.
The original vegetarian menu includes many house
specialties but the owner recommends: pancakes filled with
chick peas and other vegetables in Tahini (sesame
paste) sauce, as well as Tofu Risotto.
The cooks in Karuzo Restaurant use only whole grain flour,
sea salt and brown sugar, for their recipes, and both
pizza and pancakes, are made from rye flour.
Type of Food: Lacto, Vegan-friendly, Beer/Wine,
Mediterranean, Fish, Sushi, pizza... - No meat or eggs.
